Over the next three weeks, a weak increase in sedimented protein to 7.3 ± 0.1% (w/v) was observed. The samples containing 100 pkat mL−1 showed decreasing amounts of sedimented protein from 1.90 ± 0.41 to 0.75 ± 0.07% (w/v), due to higher degrees of hydrolysis. The comparison of the pH 4.6-soluble peptides (Fig. 6A) and the sedimented protein (Fig. 6B) shows that there is no direct correlation.
