Regarding the LEB-V10 enzyme, the long reaction time
needed to reach the maximum yield was certainly due to the
low enzyme activity used in the reaction. Nevertheless, in
this case it is worth noticing that the FOSs are not hydrolysed
along the whole process, leading to high concentrations
of this product. Furthers studies of optimisation will probably
lead to the increase of the yields and mainly productivity,
by varying, e.g. temperature, pH, sucrose and enzyme
concentrations.
