are underway in the Codex Alimentarius Commission (Lunn
& Buttriss, 2007). The beneficial role of DF in health and nutrition
has been demonstrated in metabolic and physiological effects on
the gastrointestinal tract and on carbohydrate and lipid metabolism,
in the reduction of chronic ailments like cardiovascular
disease and certain forms of cancer (Schaafsma, 2004). More specifically,
DF plays an important role in lowering cholesterol levels in
some hiperlipidemic individuals, improving glucose tolerance
(Jenkins et al., 2003), having a positive effect on diarrhoea and constipation
(Bosaeus, 2004), and serving as anti-inflammatory and
anti-carcinogenic agents in the digestive system.
