The enzymatic hydrolysis process of raw and pretreated okara used the same enzyme loading volume of each enzyme. The enzymatic conversion rates on raw okara were low level, but pretreated okara increased overall. The enzyme produced from P. funiculosum exhibited highest conversion rate on pretreated okara as 83.1%. The differences in the conversion rates between the four enzymes may have been due to differences in specific activity, leading to differences in the enzymatic hydrolysis [33] and [34]. Based on these results, the enzyme from P. funiculosum was used in all further experiments.
