Specific objectives were as follows: (1) Investigate the effects of extraction temperature, solvent-to-solid ratio, particle size, and reaction time on yield of tomato seed oil extracted using hexane as solvent; (2) Establish the impact of the processing conditions on antioxidant activity of the extracted tomato seed oil; and (3)Determine the kinetics of the oil extraction and establish parameters of a 2nd order model to describe tomato seed oil extraction process under different extraction conditions.
