To further study the effect of thermal processing on the structure
of Ara h 2 from the aspect of epitopes, antibodies of three core
IgE-binding epitopes (epitopes 3, 6, and 7) were used to determine
the binding capacity of Ara h 2 after thermal processing by indirect ELISA.
