The history of sushi can be traced back to ancient times. Interestingly, sushi at that time does not actually look like how all of us see sushi nowadays. In fact, sushi is actually an evolvement from an ancient method of food preservation! During ancient times, fish is preserved by fermenting it in rice over a few months.
After fermentation, only the fish is eaten and the rice will be thrown away. Slowly, people discover that the rice itself also goes well with the fermented fish,
owing to the distinctive sourness of the rice.
Not too long ago, sushi is still considered to be a specialty that can be enjoyed only in traditional Japanese restaurants or specialty shops and demand for sushi is not common among general population. The length preparation period and its expensive pricing has been a barrier towards allowing more people to taste this wonderful dish.
