The three distinct bands corresponded to the high
intensity Soret band (418 nm), and the so called b- and a-bands
(546 and 578 nm, respectively). In particular, the absorption
maxima for the Soret and the b-bands indicated a predominance
of oxymyoglobin (MbFe(II)O2) (Møller, Adamsen, & Skibsted,
2003). In the pure turkey sample (the lowest spectrum), the
decreased intensity of the three bands, corresponding to
a decrease in the concentration of red pigments, was really
evident.
