Short-wave NIR is believed to be effective for determining
alcohol derivatives. However, it is difficult to correlate NIR spectra
and ethanol content in fresh agricultural products because of the
interferences of other O–H and C–H bond containing compounds.
Nonetheless, our study discovered the possibility of EtOH prediction,
with a low SEP and bias. This finding is useful for passion fruit
processing. The developed calibrations could estimate ethanol
concentration in the pulp where other non-invasive techniques
have not been successful.
