The DS and Ac% of acetylated starches ranged from 0.05 to 0.10,
and 1.37e2.58 g/100g, respectively. The acetylated starches with
the highest concentrations of acetic anhydride (10 and 20 g/100g)
presented higher DS and Ac% as compared with starch acetylated
with 5 g/100g acetic anhydride
