Sufficient MCFAs are crucial for the higher
biosynthesis of pleasant ethyl esters (Saerens et al., 2008); therefore,
the increase observed in the fatty acid ethyl esters in SF wine
can be ascribed to the accumulation of the substrate MCFAs in the
medium. For acetate esters, the availability of substrates (higher
alcohols) is not a major limiting factor for acetate ester production,
but the expression levels of alcohol acetyltransferases (ATF1 and
ATF2) are important (Lilly, Lambrechts, & Pretorius, 2000). Therefore,
the higher content of higher alcohols in IF wine was not
accompanied by higher concentrations of acetate esters.
