Sulfite, as its anhydrous form of sulfur dioxide, is used in the corn wet-milling
industry for the manufacture of dextrose. Our dextrose suppliers guarantee that the
product they provide us contains less than 10 ppm residual sulfite. We use no form
of sulfite in our Litesse® process. Furthermore, sulfite is a labile agent, easily
undergoing redox reactions to form other, non-allergenic oxidation states of sulfur.
Therefore, we can provide assurance that our finished product contains less than
10 ppm sulfite without performing additional testing.
Sulfite is not a typical allergen, since it does not contain a protein. As a
consequence, it is permitted to be in food products at a level of up to 10 ppm without
a labelling requirement.
