Table 5 presents the bioactive substances of lipid fractions extracted from the jatoba pulp and seed. The pulp oil showed significantly superior amount of phenolic compounds to that found in the seed oil, whose contents were 8.60 and 3.43 mg GAE/g, respectively. Tuberoso et al. (2007) analyzed the content of total phenolic compounds present in some traditional oils as rapeseed, peanut, olive, soybean and others, and the best source of these compounds was the olive oil, which presented an amount of about 0.04 mg GAE/g, lower than those found in this study
