The initial mass of the tomatoes varied from 10.5 and 11.5 g for the unpeeled tomato and from 9.0 to 5.5 g for the peeled tomato, leading to an initial moisture range 14.13–12.75 kg/kg (dry basis) for the unpeeled tomato and 12.39–9.91 kg/kg (dry basis) for the peeled tomato. The diameter of the samples ranged between 14 and 13.5 cm for the unpeeled tomato and from 11 to 13 cm for the peeled tomato.
