Conclusion
This study comparing the effect of conventional and PEF treatment
on the quality aspects of beefmuscle. PEF treatment induced significant
weight loss and had no impact on Hunter colour values compared to a
comparable ΔT induced by water bath which reduced a and b values.
Other quality and physiochemical characteristics were not affected.
The lack of impact on tenderness is attributed to the low PEF electric
fields applied under the present experimental conditions. Future
