Microscopic analysis
For each cake batter sample with and
without TS substitution, a thin layer of freshly
prepared samples was prepared immediately by
placing a drop of the batter on a microscope slide
and covering with a cover slip. The samples were
observed under an optical microscope (Model
CH30RF200, Olympus®, Tokyo, Japan) with a 10×
magnification. A digital camera was mounted on
the microscope for taking photographs.
