Among the major allergens
believed to be responsible for up to 90% of food allergies, milk
and egg allergens are the most prominent. Indeed, about 2.5% of
young children and 0.3% of adults are allergic to milk, 1.5% of young
children and 0.2% of adults are allergic to eggs, while wheat and soy
allergies in totality affect an estimated 0.4% of young children and
0.2% of adults (Sicherer & Sampson, 2010).
