3.2.1. Proximate composition
Considering the potential use of MR and VOR as dietary fibre, the processing of VOR by further purification to improve the fibre content was considered. Since fat content of MR should be reduced from 42.6% before such treatment, VOR is the economically more viable source for dietary fibre production. In this study VOR was subjected to 3 different treatment procedures to yield CCWPs (Table 2).
