Semi-freddos have much softer consistency than ice cream (the word means ‘half-frozen’ in Italian) and a wonderful creamy texture on the palate. Frozen desserts are always a firm favourite, whether they are fruit- , chocolate- or sponge-based. Sorbets often contain just egg whites. Rather than whole eggs, which gives them lightness unlike ice cream. Granitas contain no eggs at all and have a completely different texture to sorbets; they are merely frozen flavoured water, which is roughly broken up into small ice crystals.
