2.8. Texture profile analysis
Texture profile analysis (TPA) was carried out using a
TA-XT Plus (Stable Micro Systems, UK) with a 5 kg load
cell. Compression measurements were carried out using a
35 mm diameter cylinder probe to apply a 30% constant
strain through a 100 ml cup-set yogurt. A speed of
0.5 mm s
1
was used during the pre-test, compression and
relaxation of the specimens (Kumar & Mishra, 2004). The
measurements were carried out at 10 ± 0.5 C on three
replicates.
