2. Materials and methods
2.1. Food sampling
Common, general, and scientific names of four varieties of rice
and six varieties of legumes selected are shown in Table 1. These
rice and legumes varieties are commonly consumed by Thai
population. Samples were bought from two major wholesale
markets in Thailand, namely Talad Tai market in Pathum Thani
Province and Yaowarat market in Bangkok. From each market, 2 kg
of each sample were randomly collected from five retail outlets.
Each category of sample bought from a particular market was
pooled together as one composite sample (10 kg each). Each
composite sample was divided into 3 sub-groups (A, B and C).
Finally, six sets of samples were employed in this study. After
purchasing, the samples as such were transported to the Food
Chemistry Laboratory, the Institute of Nutrition, Mahidol University
