An increase in oxidative compounds such as free radicals based on oxygen, as well as H2O2, often accompanies visible CI symp- toms. CI is also often correlated with an increase in total antioxidant capacity and in the activity of antioxidant enzymes such as cata- lase and SOD (Srivalli et al., 2003). These data suggest that cold storage induces an increase in the concentration of oxidative com- pounds, and that cells react by activating systems that render these innocuous. The failure of this protective system might be one of the possible causes of the cell death induced by cold.
