It was found that PEF pretreatment (20
kV/cm and 0.5−2 ms) prior to conventional water extraction at
ambient temperature (20 °C) improved both the kinetics and
extraction yield of steviol glycosides from Stevia. A significant
reduction in extraction time was also obtained (9 folds less) for
achieving the maximum of steviol glycosides extraction
compared to that of untreated samples at equivalent diffusion
times and at 20 °C. In another study, it was observed that the
effect of PEF-pretreatment can be observed at moderate (60
°C) and high (80 °C) extraction temperatures.
