All dairy items must be stored on shelf. Nothing directly on the floor.
Storage life of dairy products such as cheese, milks, yoghurts, curds, skim products, low fat products are always mentioned on the packing and jars.
All dairy products should be stored separately from raw meats and, or seafood’s.
A production label with the date should be placed on each container on the remaining pieces of food items such cheese in case of left over in the fridge.
Storage temperature of dairy products should be between 1c – 5c.
Always strictly check and follow label production and expiry date accordingly, and should not use expired or spoiled items.
All raw eggs should be separated from ready to eat product such as mayonnaise, dressings, pates, terrines or mousses.
All kinds of raw eggs must be sanitized in food sanitizer before stored in the fridge.
Stock rotation must be maintained.
FIFO = First in > First out.
