Use of Radiation
The direct effects occur as a result of energy deposition by the radiation in the target molecule
Indirect effects occur as a consequence of reactive diffusible free radicals formed from the radiolysis of water, such as the hydroxyl radical, a hydrated electron, hydrogen atom, hydrogen peroxide, and hydrogen.
Ultraviolet(UV) radiation, at high dosage there is a marked tendency to deterioration in flavor and odor before satisfactory sterilization is achieved.
White and UB light are also used to inactivate bacteria, fungi spores, viruses, protozoa, and cysts
