Slow Cooker Vegetable Stew
Ingredients
1 medium – onion
1 medium – carrot
1 stalk – celery
1 medium – sweet potato
1 medium – russet potato
4 cup, chopped – Kale
4 clove – garlic
1 teaspoon – Italian Seasoning
1 can – diced tomatoes, canned
2 cup – pumpkin, canned
4 cup – chicken broth, low-sodium
2 breast – chicken breast
1/8 teaspoon – sea salt
1/8 teaspoon – black pepper, ground
Directions
Everything into the slow cooker on low for 8 hours. As with most slow cooker meals, the flavor only gets better the next day! And with this one the soup will thicken a little more as well feeling even more like a stew the next day
