The isolated bacteria were artificially inoculated into non-contaminated bottled soy sauce at the concentration ranging from 1000 to 100,000 CFU/mL, and then cultivated at 37 C for one month. No swelling and/or leakage were observed either in the treatment group or the control group, indicating that the bacteria isolated with the nutrient agar under aerobic conditions did not produce gas or cause swelling and leakage.
There was no significant difference in pH between the leaking and
non-leaking soy sauce.
