respectively. This means that a portion (for bread defined
as 50 g) contains 0.75 g b-glucan. The lowest suggested
daily intake of b-glucan for achieving health effects is 3 g
per day, i.e. 4 portions with 0.75 g of b-glucan. Beta-glucan
content in wheat bread was 1.4 g or 0.63 g 100 g-1 dry
weight or fresh bread, respectively. Therefore, a portion of
50 g contains only 0.31 g. This reduction has to be kept in
mind with respect to the 0.75 g per portion required to
meet the health claim.
