Kinetic modeling was successfully applied to Kramer shear
resistance and WHC of hake (Merluccius merluccius) during frozen
storage. There was a good agreement between predicted and observed
values for both markers which indicated their potential usefulness
in quality management and estimation of remaining shelf
life for frozen hake products. Since time or temperature can be
estimated by using the properties of the fillet itself, this approach
sets the basis to develop a simple authentication method for frozen
products.
