An alternative to improve the mechanical and water vapor barrier
properties of starch films is the addition of chitosan to the formulation
because chitosan is more hydrophobic than starch,
which favors the formation of films with greater strength and lower
water vapor permeability (WVP). Chitosan is not only a compound
with antimicrobial properties, but it is biodegradable, is nontoxic
and has the potential for the production of biodegradable filmswhen
blended with other polymers
