The surface color of shrimp was determined in triplicate using a
chroma meter LABSCAN XE (Hunterlab, VA, USA) fitted with a
pulsed xenon lamp. The aperture diameter of the chroma meter is
13 mm. Twenty five grams of whole shrimp samples were placed in
a sample cup. The surface color of the shrimp sampleswas recorded
and the results were reported in CIELAB color scales. The degree of
lightness to darkness is accounted by L* values, a* values measure
the degree of redness to greenness; and the b* values measure the
degree of yellowness to blueness
