2013). Pork, cold-water fish, and beef gelatins were purchased from
Sigma-Aldrich. Serum albumins were dissolved in 0.9% saline solution
at 10 mg/ml, aliquoted, and then stored at −80 °C for future use. The
reference meat samples (cow, sheep, goat, pig, chicken, and turkey)
used for this study were purchased from local grocery stores.
