Highly motivated subjects in the abrupt group had increased
liking for the samples containing 136 mg (mean increase in liking
from 47 to 67, p = 0.03) and 304 mg sodium (mean increase from
52 to 74, p = 0.01) at the final taste test; highly motivated subjects
in the gradual group had increased liking for the sample containing
304 mg sodium only (mean increase from 52 to 80, p = 0.01).
Unmotivated subjects in the abrupt group had increased liking
for the sample containing 304 mg sodium (mean increase from
61 to 75, p = 0.02); those in the gradual group had increased liking
for the samples containing 136 mg (mean increase from 47 to 69,
p < 0.01) and 304 mg sodium (mean increase from 61 to 80,
p < 0.01). There were no changes in perceived saltiness for any of
the samples among subjects who were highly motivated nor
among those who were unmotivated in either salt reduction group.
