Tested protein was dissolved in chitosan solution as described
above. 6 ml of 1 mg/ml Tripolyphosphate was slowly added into
the solution under magnetic stirring for 20 min. Then, the chitosan
nanoparticles were separated by ce
ntrifugation at speed of 20,000 g
and temperature of 4

C for 30 min. Finally, the protein concentra-
tion in supernatant was measured by UV spectrophotometry. The
encapsulation efficiency (EE) was then calculated from Eq. (1).
