Commercial green bananas (Musa AAA Cavendish), fresh grass fish (Ctenopharyngodon idella) (2.5e3 kg/fish) and other food-grade ingredients (cassava starch, soybean oil, sugar and salt) were purchased from the local market (Wuxi, China). After peeling bananas, cut and washed bananas slices (2.5 mm in thickness) were freeze-dried at 50 C for 12 h,then ground to powder-form in a food grinder (SF180, Zhouxiang Pharmaceutical Machinery Co., Ltd.Shanghai, China), passed through a 147 mm-sieve and kept in polyethylene bags at 4 C until use.
