The aim of this study was therefore to evaluate the effects of a
modified chitosan-based coating, incorporating EOs nanoemulsion
as antimicrobial agent, in combination with two non-thermal
treatments (HHP and PL) against Listeria innocua inoculated in
green beans, as well as to assess the impact of these combined
treatment on L. innocua viability, product color and mechanical
resistance to cutting during 14 days of refrigerated storage of the
inoculated green beans.
