The initial population of tested pathogens was approximately 6 log CFU/
mL. All the pathogens tested were counted as less than 1 log CFU/
mL in black carrot juice samples stored at 37 C for 7 days. However,
all the pathogens survived in the samples stored at 4 C up to 7
days. The initial counts of E. coli O157:H7, S. Typhimurium and
L. monocytogenes were 6.22 log CFU/mL, 6.29 log CFU/mL, and
6.14 log CFU/mL, then they decreased to 5.30 log CFU/mL,
4.13 log CFU/mL and 3.12 log CFU/mL at the end of day 7, respectively
