To prepare the fermented CW formulations and subsequently screen which formulation presented better conditions for strain development, addition of a carbohydrate source (sucrose [Labsynth, São Paulo, Brazil]), a nitrogen source (yeast extract [YE] [Acumedia] and soy protein hydrolysate [SPH] [Oxoid, Hampshire, England]) as supplements were tested according to Soccol (2009).
