In the case of sample with 10 pkat mL1 added enzyme, 7.3% (w/
v) sedimented protein and 16.1 mM pH 4.6-soluble peptides are
formed after four weeks of storage, whereas the addition of
1 pkat mL1 results in the formation of 7.5% (w/v) sedimented
protein and 6.5 mM pH 4.6-soluble peptides. This is probably caused
by the endopeptidase activity, which leads firstly to the formation
of bigger protein fragments that are not soluble at pH 4.6. The
further hydrolysis of these fragments increases the amount of
peptides soluble at pH 4.6. Thus, the increase of sedimented protein
is followed by the increase of pH 4.6-soluble peptides.
