Uncoated strawberries showed signs of fungal decay
after the third day of storage at 10 C (Fig. 1). After six
days of storage, 33.5% of uncoated fruit was infected by
molds while no sign of fungal decay could be detected by
visual inspection of fruits coated with 1.5% chitosan or
1.5% chitosan + 0.75% CaGlu. Of the fruit coated with
1% chitosan, 12.5% was observed to be infected on the
sixth day of storage.
