In the present study, the anthocyanin content of potatoes ranged from 6.7 (Valfi cultivar) to 13.0 mg 100 g1 FW (Vitelotte cultivar) in purple fleshed tubers and from 3.4 (Rosalinde cultivar)
to 6.8 (Herbie 26 cultivar) mg 100 g1 FW in red fleshed tubers
(Table 2).
