For the anthocyanin content in the storage roots of the sweet potato, Sinjami with purple-fleshed had the highest level of anthocyanins, 7.14 mg DW, and another purple-fleshed cultivar, Yeonjami ranked second with a content of 2.98 mglg Dw (Table 3). Anthocyanins were not detected in the other samples. Peonidin 3-caffeoyl-p-hydroxybenzoyl-sophoroside-5- glucoside (8) and peonidin 3-caffeoyl sophoroside-5-glucoside (6) were two major anthocyanins in both samples.
