Results show that the beginning of crystallization, represented by the onset on the graph, is close to the total crystallization of the matter. The variation in tem- perature between primary nucleation and total crystalli- zation of the emulsion is limited: it is of 0.3°C on average. On the other hand, temperature variation is high for all components to reach total melting. It is necessary to use high levels of energy to maintain the emulsion in a state of total melting.
