2.4.1. Preparation of gelatin gels containing the oxidized extracts
The stock solutions of oxidized EKWE and ECBE prepared atdifferent pHs (7, 8 and 9) were added into gelatin solutions
(6.67%, w/w) (401C) to obtain afinal concentration of 1% (w/w) of gelatin. The mixtures were stirred using a magnetic stirrer for 1 h at room temperature (25–271C), followed by setting at 101C for 16–18 h. The control gelatin gels were prepared in the same manner, except that the extracts were omitted. To study the effect of concentrations of oxidized EKWE and ECBE on gelatin gels, the extracts were added into gelatin solution (6.67%, w/v) tofinal concentrations of 1, 2, 4, 6 and 8% (w/w) of gelatin. The gelatin gels were prepared as previously described. The resulting gels were subjected to the various analyses.
