A cylinder with a diameter of 20 mm was cut out from thawed pizza crusts (average thickness: 5 mm) with a cork borer. The texture was measured using a TA.XT plus Texture Analyzer (Stable Micro Systems Ltd., Godalming, U.K.) by compressing the crusts by 2 mm. Six measurements were done per sample and data analysis was performed with the software Texture Exponent (version 6.1.5.0, Stable Micro Systems Ltd.).
