Culture yeast with spraying of sugarcane juice (tray 5)
at intervals of 12 h had given increase in specific enzyme
activity continuously (Table 1) till 96 h. It may be due to
adaptability of the culture yeast to steadily start producing
invertase in the presence of additional sugar in the
spray liquid. Aranda et al. (2006) reported that an increase
in invertase production noticed when glucose was
present in the medium (up to 100 g/L) by Aspergillus
niger in SSF.It is also suggesting the possibility that Tray
5 (Table 1) gave higher invertase activity at only 96 h
owing to the possibility of yeast cells opting to consume
reducing sugar available along with sucrose in
the sugarcane juice which was sprayed onto the SSF tray
intermittently
