The water for the irrigation comes from underground reserves of water.
Some of it dating to the last ice age; 20,000 years ago, when the climate was very different than it is today.
Water in some areas is pumped up from as far as 1km underground.
It uses a Central Pivot Irrigation system, where the equipment rotates around a pivot with sprinklers watering the crops.
It uses less water than other irrigation systems.
They are usually 1km in diameter (sometimes even 3km).
Most of the food grown is produced to feed a developing cattle industry.
These farms did not exist 15 years ago and are increasing in number.
