Inulin is a storagecarbohydrate in plants, having fructose moieties joined by (2-1)-d-frutosyl linkages and is resistant to digestion in the human smallintestine due to the of anomeric C-2 but it can befermented in large intestine . Almost 90% ofthe inulin passes to the colon and digested by bacteria present there. It is thus a significant component of the dietaryfiber complex and is labeled as dietary fiber on food items
