The pectinase enzyme solution is used in peeling process of citrus fruits, it is infused into the peel of fruit and then infused into the albedo, or white layer, of the citrus fruit peel to break down the pectin contained in the albedo and thereby to facilitate an easy removal of the peel. Many prior arts have been introduced the peel removal process of the fruits but they is designed specifically to produce fruit segments and have not been satisfactory in reliably providing peeled whole fruits.
