The results show that the octopus by-products and CS have high moisture contents, about 86.5% and 82.7%, respectively. This could be explained by the high capacity of water retention in these byproducts especially during cleaning and frosting steps in the manufacturing industry, as reported by Georgantelis, Gkalitsopoulou, and Kontoveros (2012). Moreover, by-products had high protein content, 14.0% for the CS, and 11.5% for octopus by-products. Fat content was less than 1.5%, for both octopus and cuttlefish by-products.
